Stuffed Spaghetti Squash Recipe for Men

On a cool rainy day or when the weather turns cold, nothing says comfort food like stuffed squash.  This recipe produces a hearty meal, yet is so easy to make. Spaghetti squash is stuffed with lean ground pork and onion, then topped with a creamy mushroom sauce.

1 medium size spahetti squash

1 lb ground pork or ground chicken (or half and half)

1 egg

1/2 cup fine dried bread crumbs

1/4 cup finely chopped onion

pepper to taste

1 can condensed cream of mushroom soup (preferably Cambells brand)

Cut the squash in half, lenghtwise. Place both halves of the squash, shell-side up, on a microwave-safe plate. Add 4 tablespoons of water to the plate to create steam when cooking. Place in microwave oven and microwave on high until the squash is tender and separates into spaghetti-like strands when poked with a fork, about 10 minutes.

Meanwhile, as squash is cooking, in a medium sized bow, mix together the meat, egg, bread crumbs, onion, and pepper until well blended.

When sqaush is cooked, fill each half of the squash with half of the meat mixture, pressing the mixture down with a spoon as you go.

Top with the mushroom soup (undiluted) and bake at 400 degrees for 1 hour.
