Hearty Stuffed Spaghetti Squash

Spaghetti Squash Recipe for Men
On a cool
rainy day or when the weather turns cold, nothing says comfort food
like stuffed squash. This recipe produces a hearty meal, yet is
so easy to make. Spaghetti squash is stuffed with lean ground pork
and onion, then topped with a creamy mushroom sauce.
1 medium size
1 lb ground
pork or ground chicken (or half and half)
1/2 cup fine
dried bread crumbs
finely chopped onion
pepper to taste
condensed cream of mushroom soup (preferably Cambells brand)
squash in half, lenghtwise. Place both halves of the squash,
shell-side up, on a microwave-safe plate. Add 4 tablespoons of water
to the plate to create steam when cooking. Place in microwave oven
and microwave on high until the squash is tender and separates into
spaghetti-like strands when poked with a fork, about 10 minutes.
squash is cooking, in a medium sized bow, mix together the meat, egg,
bread crumbs, onion, and pepper until well blended.

mixture, pressing the mixture down with a spoon as you go.
Top with the
mushroom soup (undiluted) and bake at 400 degrees for 1 hour.
